Working title: An Irish Butcher's Kitchen by Pat Whelan, who is an artisanal butcher, multi-generation farmer/meat producer, and an innovative waygu breeder in Co.Tipperary, Ireland. The abattoir is a clean, cool, stone room where the freshly butchered meat is dry-aged until it reaches peak flavour, ready to be taken to the shop in Clonmel for distribution & sale.
